ROTW - No Bake Oatmeal Raisin Granola Bars (Vegan/GF)

Wet Ingredients:  
2 Tbsp melted coconut oil
1/4 cup unsalted natural almond butter
1/4 cup pure maple syrup
1/4 cup coconut sugar (optional)
1 tsp pure vanilla extract

Dry Ingredients:
1 cup gluten free rolled oats
1/4 cup gluten free oat flour
3 Tbsp ground flax
1 tsp cinnamon
1/4 tsp salt

Add-ins:
1/2 cup unsweetened organic raisins
1/2 cup nuts (walnuts, sliced almonds)
1/4 cup unsweetened coconut


Instructions
  1. Preheat oven to 350’ F. Line an 8x8 pan with parchment paper. Set aside.
  2. In a medium bowl, whisk together the wet ingredients
  3. In a large bowl, whisk together all the dry ingredients
  4. Pour the wet mixture over dry. Using a rubber spatula or wood spoon., fold until well mixed. Fold in add-ins
  5. Bake 15-20 minutes. Keep in mind that the bars will harden as they cool
  6. Allow to cool. Slice into bars. Enjoy
